<b>Meatless Mondays: A Healthy Alternative</b>
Millbrook is now offering students, faculty, and staff the opportunity to go meatless on Mondays. Millbrook's Director of Dining Services for Aramark Higher Education, Greg Lanphear, and the Environmental Council are joining with the Meatless Monday campaign to help educate the students and faculty about how eating less meat can be a healthy choice while helping lower the school’s carbon footprint.
“It’s a win-win,” explains Mr. Lanphear. “Educating the community on all the diverse benefits of choosing not to eat meat one day a week will help them make better choices in the future, when they eat somewhere other than the dining hall. It also helps further Aramark’s pledge to become more carbon neutral on our campuses, while educating our customers on proper nutrition.”
This is in direct line with Millbrook’s mission to educate students about how their individual decisions affect the planet and to practice environmental stewardship in their day to day lives. “Continued education about where our food comes from and how it affects our health and environment is more important now than ever, and we want the students to learn to make educated decisions.”
This is just one example of the creativity and care that goes into all of the food choices in our kitchen; our menus are always include delicious and varied choices, truly some of the best food in the Hudson Valley.
